so i looke at a site that was above me and on there page all be it near the bottom they had
Fish and Seafood in there write up.
would this make a difference

Hi Sean, I think what you have picked up on is header text.
SEO, (and lets be honest, Google) is whole host of tips and tricks. Google has a complex algorithm that decided the fate of your site and its pages, and 100's of things make up this algorithm. The exact makeup is known only to Google, so the rest of the world has to speculate and guess. Any SEO outfit that tells you they know how Googles ranking works is telling you porky pies, and to compound this, Google likes to update their algorithm reguarly to which tends to give all the search engine results a good shake up.
The basic format of SEO is farly static, its the importance big G places on individual aspects that causes all the fun.
What your talking about is header title tags such as <h1>Steves Fish</h1>
Google will see this as an important keyword on the page, and will assign more importance to it, than say a title further down the page which may be <h2>Steves bargain fish</h2>
Importance of these header tags is mixed. Me personally, I think the h1's are important, after that the rest less so, but every little helps!
The current number 1 way to get yourself ontop of page 1 google for your given keyword in my personal view, is good old fashioned anchor text.
So link building, with your keyword as the link.
